One of the more rewarding parts of covering the local food scene is watching what happens when chefs are handed something familiar and given the freedom to rethink it. During this year’s “Say Cheese” month, restaurants across Grants Pass have embraced that challenge, turning a simple grilled cheese sandwich into a showcase of creativity while helping raise awareness and support for the Josephine County Food Bank.
Stop No. 26 on the tour led to Wild River Pub, where the kitchen delivered one of the most imaginative interpretations in the entire series.
Their entry, the Bloody Mary Grilled Cheese, is exactly what the name suggests, and then some.
It begins with sourdough bread infused with Bloody Mary seasoning, giving the crust a savory edge with a subtle kick of spice. That seasoning does more than add flavor; it sets the tone for the entire sandwich, echoing the familiar notes of the classic brunch cocktail without overwhelming the palate. Inside, mozzarella and gouda melt into a rich, cohesive layer, joined by smoky bacon and slices of jalapeño that bring both depth and heat.
The finishing touch is what truly pulls the concept together. A topping of pickled vegetables adds a bright, tangy contrast that cuts through the richness and ties directly back to the Bloody Mary inspiration. It is a small detail that makes a noticeable difference, elevating the sandwich from creative idea to something fully realized.
The balance is what stands out most. The cheese provides the expected comfort, smooth and indulgent, while the bacon introduces a smoky backbone. The jalapeños contribute just enough heat to keep things interesting without overpowering the other elements. If Wild River Pub’s entry is any indication, there is still plenty of room to push the boundaries of what comfort food can be. What starts as a familiar staple can, in the right hands, become something entirely new without losing the qualities that made it a favorite in the first place.
