Stop number fifteen on my Say Cheese month journey brought me to Corvettes Bar and Grill, located at 1831 NE 6th Street in Grants Pass. Each stop on this local tour has offered something a little different, but this visit turned out to be one of the more creative interpretations of the classic grilled cheese that I have encountered so far.
One of the highlights of this stop was getting the chance to meet the chef behind the sandwich, Justin Haydock. It is always interesting when you can put a face and a story behind a dish. Haydock spoke with genuine enthusiasm about food and about the process of building flavors that really hit the palate. His goal with this particular sandwich was not simply to make a grilled cheese, but to create a layered experience where every ingredient had a purpose. After taking the first bite, it was clear that he accomplished exactly what he set out to do.
The sandwich itself starts with a strong foundation: cheese-crusted sourdough bread. The exterior has that golden, crisp texture that every great grilled cheese needs, while the sourdough adds a subtle tang that gives the sandwich structure and character. That crunchy exterior gives way to a warm, melty center where the real flavor combinations come to life.
Inside the sandwich you will find sliced turkey paired with Gouda and provolone cheeses. The cheeses melt together beautifully, creating that smooth, rich texture that defines a proper grilled cheese. By the time the last bite was gone, it was clear that this was not just another grilled cheese stop on the tour. Corvettes Bar and Grill delivered a thoughtful and flavorful take on a comfort food classic. The flavors hit hard in the best way possible, and the creativity behind the build makes it a memorable entry in this year’s Say Cheese journey.
If the goal was to create a grilled cheese that leaves an impression, Chef Justin Haydock certainly pulled it off. This one earns its place as a solid and very flavorful contender on the Say Cheese trail here in Grants Pass.
