This week, my latest food stop brought me out to Weekend Beer Company, where one of my favorite local pop-ups, Mayjah Flava, was once again serving up authentic Hawaiian comfort food that continues to impress.
I went with the Mayjah chicken plate, a straightforward dish that comes with rice and mac salad, but delivers far more than its simplicity might suggest. The chicken was fried to perfection, with a crisp, golden exterior that gave way to tender, juicy meat inside. It was then coated in a sweet and spicy sauce that truly set the tone for the entire plate. The flavor had just the right balance, never overwhelming, but bold enough to stand out.
