Every now and then, a menu item comes along that makes you stop after the first bite and think, this could be something special. Whether it ever finds its way onto national television is anyone’s guess, but if Guy Fieri ever decides to roll through Grants Pass in search of bold flavors and creative local cooking, I know one sandwich I’d put in front of him first.
Some of the best food I’ve ever experienced hasn’t come from expensive restaurants or celebrity chefs. It has come from people standing shoulder to shoulder in a kitchen, tossing around ideas, laughing through trial and error, and refusing to settle until they create something everyone around the grill gets excited about. That’s exactly how this latest creation came to life.
It all started with a conversation between me and the team at Brothers Bento & Tacos. Like most great food ideas, it wasn’t planned. We were talking about flavors we each loved and wondering what would happen if we combined them into something that almost everyone can appreciate—a grilled cheese sandwich. It sounded simple enough at first, but once we started throwing ingredients on the table, we quickly realized this wasn’t going to be an ordinary grilled cheese.
After several rounds of experimenting, tasting, adjusting, and tasting again, we finally landed on a combination that surprised all of us.
The foundation begins with thick slices of grilled sourdough, toasted until the outside develops a golden, buttery crunch while the inside remains soft enough to soak up every layer of flavor. Mozzarella provides the familiar creamy stretch everyone expects from a grilled cheese, while cotija cheese introduces a slightly salty richness that immediately gives the sandwich more personality.
Then comes the al pastor.
Perfectly seasoned with smoky spices and cooked until tender, it adds a depth of flavor that transforms the sandwich from comfort food into something far more memorable. Every bite delivers savory richness without overpowering the cheeses surrounding it.
What truly ties everything together, however, is our guava habanero-infused cream cheese.
I’ll admit, it sounded a little unusual when we first discussed it. Sweet guava and habanero peppers don’t immediately make people think of grilled cheese. But that’s exactly why experimenting can be so rewarding. The guava brings just enough fruitiness to brighten each bite, while the habanero offers a slow-building warmth that complements the smoky pork instead of competing with it. The result is creamy, smoky, slightly sweet, and finished with just the right amount of heat to keep you reaching for another bite.
Creating dishes like this reminds me why I enjoy working at Ethos as much as I do.
One of the greatest parts of being surrounded by other independent food truck owners is that there isn’t a sense of competition nearly as much as there is a spirit of collaboration. Everyone brings different culinary backgrounds, different techniques, and different ideas to the table. Instead of keeping those ideas to themselves, many of us enjoy sharing them, challenging one another, and seeing what happens when those creative worlds collide.
That willingness to collaborate says a great deal about Southern Oregon’s food truck community. Small businesses here understand that supporting one another ultimately benefits everyone. Customers receive exciting new menu items they won’t find anywhere else, while local entrepreneurs continue building friendships that make the entire food scene stronger.
For me, that’s what food truck life has always been about.
Yes, we all want to serve great food. We want people to leave happy, tell their friends, and come back again. But beyond the menus and the recipes is a community of people who genuinely enjoy helping one another succeed. Those relationships are just as important as the meals we serve.
So, will Guy Fieri ever pull into Ethos with his red Camaro looking for the next hidden gem?
I honestly have no idea.
But if that day ever comes, I’ll already know exactly what I’ll hand him. It’ll be a grilled sourdough sandwich layered with mozzarella, cotija cheese, smoky al pastor, and our guava habanero-infused cream cheese—a sandwich born from friendship, creativity, and the simple belief that some of the best food ideas happen when talented people decide to cook together.
Until then, we’ll keep doing what we love: creating new flavors, supporting our fellow local businesses, serving our community one meal at a time, and having a lot of fun along the way. And who knows? Maybe one day Guy Fieri really will stop by for a bite.
